1 liter milk
100g butter – Melt. Add milk. Keep at 37C.
100g yeast/28g dry
2 tsp cardamom
0.4 tsp salt
3 dl sugar
1.6kg flour
Mix all dry ingredients.
Add milk mixture and knead by hand or machine for 10min. Proof 40min.
Filling:
300g butter
3 dl sugar
3 tbsp cinnamon powder
2 tsp Vanilla sugar
2 eggs + milk to brush with
1/2 dl Pearl sugar (Pärlsocker)
Roll out dough flat and fill with cinnamon butter. Roll and cut or do twists. Proof 40min.
Brush with egg wash and sprinkle with pearl sugar. Bake 15min at 200C.
